Chargrilled Leeks with Truffle Cheese

We’ve adapted this from a Riverford Organic’s recipe in celebration of St. David’s Day. Our special addition is Snowdonia Cheese Company’s Truffle Trove cheese which really makes it a dish fit for a saint. We cooked this on our Plain Jane Swing Arm but would work equally well on a Half Moon BBQ Rack. To vary this recipe, you could try adding lightly toasted pinenuts or pumpkin seeds, or using a sweet-sour dressing made with olive oil, balsamic or red wine vinegar and a little sugar. Other cheeses such as Feta, Gorgonzola or Dolcelatte are also a delicious addition.

Serves 4 as a Side Dish Or 2 as a Main
Prep time: 5 mins

Ingredients:

4 large (cut into manageable lengths) or 8 small leeks
Snowdonia Cheese Company Truffle Trove cheese
Olive oil
Lemon juice
Flat leaf parsley, roughly chopped
Salt and pepper

Method:

Cooking time: 15 min

1.Par-boil the leeks until just tender. Drain and pat dry. Heat some olive oil in a griddle pan until fairly hot.
2.Smear a little more olive oil over the leeks and chargrill until nicely marked.
3.Remove from griddle and arrange on a pretty serving plate. Crumble over plenty of Snowdonia Cheese Company’s Truffle Trove cheese and dress with olive oil, lemon juice, seasoning and parsley. Eat hot or cold with fresh crusty bread.
