We’ve created this recipe in celebration of St. David’s Day, one of the most important days in the calender here in Wales. Celebrated throughout the country on the 1st of March it is well known for its vibrant traditional dress, bright yellow daffodils and green leeks. Saint David’s day is also known as the Feast of Saint David which of course got our cogs turning.
As we are based in Wales and pride ourselves on using Welsh Steel to manufacture all of our fire pit products, we thought it only makes sense to get one lit and make some Welsh rarebit in true St Davids Style.
Serves 4
Ingredients:
250ml Brown ale
50g Unsalted butter
50g Plain flour
280g Mature cheddar – grated
2 Heaped tsp English mustard powder
2 tbsp Worcestershire sauce
2 tbsp Chopped chives
4 Thick slices of white bread

Method:
- In either a small saucepan over BBQ Rack or our Hanging Cooking Bowl gently warm the ale, once warm set this aside.
- In another small saucepan, melt the butter completely, once melted add in your flour to form a roux. Cook this for 1 minute.
- Whisk in the warm ale bit by bit to create a thick sauce.
- Add your cheddar and whisk together to create a paste like consistency, then add your mustard powder, worcestershire sauce and chives.
- Place your BBQ Rack over some cooling embers and add hot plate/skillet pan if you wish. Add your bread and lightly grill on one side until golden.
- Flip your bread over and spread each piece with the cheese mixture, place back on the grill and cover with Roasting Oven Smoker Box to melt the cheese.
