Roo Hasan has taught us a thing or two about cooking over wood; as the owner of PomPomCooks she really knows her stuff. We’ve never been the boring type and Roo has definitely taught us never to stop at sausages and burgers when you can perfect peaches and create pretty pavlova’s. For something a little different yet still a crowd pleaser try Pom Pom’s Pavlova with grilled Amaretto peaches and cardamom cream, delish!
Serves 4 – Cooked on our Asado Doble over The Great Welsh Charcoal Companies finest BBQ Charcoal.
Ingredients:
4 tsp honey
2 tbsp amaretto liqueur
1 tsp ground cardamom powder
4 meringue shells
8 ginger but biscuits, crushed

Method:
1. Prepare a BBQ or Firepit for direct cooking over medium heat.
2. Drizzle the peaches with the ghee and honey then lay them over the hot grill.
3. Keep turning the peaches and cook until softened slightly and sweet smelling. Douse them in the amaretto as they are cooking and have begun to turn golden.
4. As the peaches are cooking, whisk the cream with the cardamom and vanilla seeds till lightly whipped.
5. Plate up the meringue shells then serve by placing a scoop of the cardamom cream on top of each meringue. Top with the grilled peaches and sprinkle the crushed gingernut biscuits on top before serving.
